Description
Pancetta Coppata from the evolution of the Norcina tradition: a salami with the taste of pancetta bacon, but lean like coppa. The bacon is defatted, enriched with herbs and spices, and then rolled around the coppa to create a cylindrical salami, similar to rolled bacon. It is finally stuffed, tied, and slowly aged. It is distinguished by its sweet aroma, delicate taste and soft texture. It is presented in several alternating red-pink and ivory-white coloured layers.
