Description
This local speciality pancetta bacon is distinguished by its aroma and extremely sweet flavour. Made from pork from pigs strictly born and raised in Italy, it is sprinkled with a mixture of salt and spices according to the traditional recipe. A cold rest period allows the salt and seasonings to spread evenly throughout the meat. After massaging, the pancetta bacon is rolled up, pressed, tied and then left to dry in special rooms for a period ranging from 10 to 15 days. After drying, a long ageing period in a cellar begins. When cut, slices are distinguished by a typical alternation of bright red and pinkish white circular layers. On the palate, it is soft, with a tendency to melt in the mouth, thanks to the presence of fatty parts, which also give it its delicate and distinctly sweet flavour. It is proposed with the rind pressed between two pieces of woods, hence the name of Pancetta al Tronco, where “tronco” means “trunk”.
