Description
Guanciale Stagionato is one of the most typical cured meats of Italian tradition, made from the cheek meat of pigs born and raised exclusively in Italy. The process begins with a careful and skilful seasoning of the meat with a special blend of salt and spices. This is followed by cold rest, allowing the salt and aromas to be distributed evenly, and then massaging. Finally, the curing is carried out in special rooms, for no less than 2-3 months.
The result is an appetizing, moreish cured meat.
